Maceration: pumping over and daily deléstages, for 7 days.
Malolactic fermentation in stainless steel.

In 2001 the actual owners, Jan De Bruyne, a Belgian physician and his Italian wife Marchesa Paola Invrea, bought this historical winery in Diano d’Alba, Piedmont.
Le Cecche produces the classical wines of the region, Langhe Rosso, Dolcetto di Diano d’Alba, Barbera, Nebbiolo and Barolo in red, Langhe Bianco in white (Manzoni Bianco and Timorasso).
