The sporadically growing grasses are mowed and, along with the pruned vine clippings, are shredded and scattered in the vineyard, to enrich the soil organically. Products allowed in organic farming are used to prevent diseases and parasites

Manual, from late September to early October

Vinification 
 
Fermentation at a controlled temperature and refinement for 2 years in oak wood barrels of 132 gallons and in barrique barrels of 60 gallons, so that the wood scent is not intrusive

Average annual production is 3000 bottles
