End of October, by hand with specific grapes selection


Red vinification. Crushing and destemming. Skin contact for 15-20 days and alcoholic fermentation in steel tank at controlled temperature. Devatting, then spontaneous malolactic fermentation. 

Ageing 30 months in stainless steel vat, 18 months in barriques, 9 months in bottle.

Sensory profile

Clear ruby red color with garnet reflections. Scents of red fruits in spirit blend with an elegant spice of pepper and cinnamon; delicate toasting notes finely contrast with a floral bouquet. Persistent flavor with good body, velvety tannins, elegantly balanced

Food pairings

Stuffed beef, gnocchi with gosling sauce, spicy and elaborate cooking. Great with truffle or porcini mushroom dishes. Excellent as meditation wine
