Lazio IGP Rosso “Volgente”
Merlot 50%, Cabernet Sauvignon 30%,
Alcohol by volume
Colour: Limpid and clear with intense cherry red
and garnet reflections.
The grapes are hand-picked and gathered in 15 Kg
lined crates. Grapes are determined before crushing with cold maceration for 12-18 hours.
Addiction of selected yeasts.Temperature controlled alcoholic fermentation (for about 2 weeks).
Post-fermentation maceration for about 1 week.
Decanting of the wine and pressing of the marc.
Ageing in barrique for approximately 12 months.
Blending and bottling in the month of January.
This wine is characterised by notes
of leather, cocoa, tobacco, cherries and berries.
There is also the balsamic and toasted influence
conferred by the oak ageing.
Warm, intense and smooth on the front
palate. There is evidence of soft tannins without
excessive astringency. The wine is full, ethereal and
substantial, some signs of a vintage of sweet quality
and painstaking preparation.
